Caster- Superfine Sugar

Golden Bakers Sugar
 Mauritius is an island nation off the coast of Africa in the southwestern portion of the Indian Ocean. It is here that specialty sugars, including Golden Bakers Sugar, are grown.
Golden Bakers Sugar actually retains much of the flavor of the cane itself, thereby emitting a delicate molasses flavor. Light in texture as well, we suggest using this as a table sugar or in making preserves. Consider it also, as a substitute in any recipe calling for white granulated sugar.

 The Island nation of Mauritius is a busy place. Demerara sugar is their thing. The cane is grown in rich volcanic soil, harvested, then the raw unrefined sugar is steamed allowing much of flavor of the cane to remain. The result is similar in appearance to brown sugar, but paler. It is left slightly coarser than Golden Bakers sugar.
Try this on cereal or yogurt, perhaps in your morning coffee. We’ve glazed a ham with it. Oh gosh! Dessert toppings and cookies of course.

Turbinado Sugar
 A great name Turbinado, derived from an early milling process used on the Island Nation of Mauritius.
Turbinado sugar is the coarsest of these 3 sugars. With its light golden color and an old-fashioned, light molasses flavor, its uses are many. Try it in custards or scattered on top of creme brulee. The caramelization is beautiful. We see it finishing a caffe latte or cappuccino. The moisture and heat from the steamed milk intensifies its flavor.
