Caster- Superfine Sugar
pad
Known in Great Britain as caster, superfine sugar is more finely grained than regular sugar, and because it dissolves almost instantaneously, is well suited for making meringues and sweetening cold liquids. It can be substituted cup for cup for regular granulated sugar. Treat yourself. 16 ozpad

Quai Sud produces pure cane sugar naturally flavored then packaged in beautifully rugged raffia bags, complete with a wax seal. This sugar is great for teas, fruits, yogurts, and desserts. It is a bit over the top, but why not. Creme brulee perhaps? A great gift as well. 8 ozpad

Demerara Sugar
Golden Bakers Sugar
pad
Mauritius is an island nation off the coast of Africa in the southwestern portion of the Indian Ocean. It is here that specialty sugars, including Golden Bakers Sugar, are grown.

Golden Bakers Sugar actually retains much of the flavor of the cane itself, thereby emitting a delicate molasses flavor. Light in texture as well, we suggest using this as a table sugar or in making preserves. Consider it also, as a substitute in any recipe calling for white granulated sugar.

A little something different, we know, but this will take your baking expertise to the next level. 1 lb bagpad

Demerara Sugar
pad
The Island nation of Mauritius is a busy place. Demerara sugar is their thing. The cane is grown in rich volcanic soil, harvested, then the raw unrefined sugar is steamed allowing much of flavor of the cane to remain. The result is similar in appearance to brown sugar, but paler. It is left slightly coarser than Golden Bakers sugar.

Try this on cereal or yogurt, perhaps in your morning coffee. We’ve glazed a ham with it. Oh gosh! Dessert toppings and cookies of course.

A great name Turbinado, derived from an early milling process used on the Island Nation of Mauritius.

Turbinado sugar is the coarsest of these 3 sugars. With its light golden color and an old-fashioned, light molasses flavor, its uses are many. Try it in custards or scattered on top of creme brulee. The caramelization is beautiful. We see it finishing a caffe latte or cappuccino. The moisture and heat from the steamed milk intensifies its flavor.

Add this to your culinary arsenal. 1 lb bagpad
