Tapenades Gotta Try This!



A tapenade is a Provencal product consisting of pureed or finely chopped olives, capers, and anchovies in olive oil. It may also contain garlic, herbs, tuna, lemon juice, or brandy. A popular dish in the south of France, it may be eaten as an hors d’oeuvre, spread on toast, or used to stuff filets as a main course.

Serving suggestion: Refrigerate tapenade. Just before serving, arrange leaves of endive on platter with tapenade available to spoon into each boat-shaped leaf. A classy appetizer.
