Sauces and SpreadsA TAPENADE is a Provencal product consisting of pureed or finely chopped olives, capers, and anchovies in olive oil. It may also contain garlic, herbs, tuna, lemon juice, or brandy. A popular dish in the south of France, it may be eaten as an hors d’oeuvre, spread on toast, or used to stuff filets as a main course. A CONFIT (cone-fee) is one of the oldest ways to preserve food, and is a specialty of southwestern France. Both fruit and meat confits involve immersion in a substance which both flavors and preserves the product. Fruit confits are preserved in sugar while meat confits, confit of duck for example, is preserved in herbs, salt, and a savory broth or fat. |
