Confit



A confit is one of the oldest ways to preserve food, and is a specialty of southwestern France. Both fruit and meat confits involve immersion in a substance which both flavors and preserves the product. Fruit confits are preserved in sugar while meat confits, confit of duck for example, is preserved in herbs, salt, and a savory broth or fat.
